Protein chocolate eclairs


Enjoy a dessert rich in proteins

Ingredients of the protein eclairs

Protein choux pastry:

  • 2 egg yolks,
  • 1 scoop of vanilla casein,
  • 1/4 tsp baking powder,
  • A pinch of salt,

Chocolate cream

  • 120ml soya milk,
  • 1 tbsp corn starch,
  • 1 tsp low-fat cocoa,
  • 1 tsp vanilla extract,
  • agave syrup

Preparation of the protein eclairs

Protein choux pastry:

Preheat oven to 200°C

Beat the egg yolks with a whisk until white

Add vanilla casein, salt and baking powder.

Shape the dough into a ball and divide it in 2.

Shape these 2 dough pieces into eclairs.

Bake in a hot oven for 20 minutes

Chocolate cream

Mix the corn starch and the cocoa in a pan,

Add the milk and whisk to prevent clumping.

Add the vanilla and some agave syrup and mix.

Cook until the mixture thickens.

Split your eclairs in 2,

Put some cream inside your choux, and also on top as icing.
